Roasted Cauliflower, Cranberry & Almond Salad
The perfect way to dress your veggies to impress. The recipe makes a flavourful and visually impressive side dish. Additionally this colourful dish is perfect for your BBQ spread or for when entertaining guests.
About the Recipe
- For this easy yet impressive side dish first roast cauliflower for a sweet roasted flavour. Next top with the sweetness of cranberry sauce, the crunch of almonds, sweet pops or craisins and then the freshness of herbs.
- Finally dress with a creamy and zesty yoghurt based dressing.
Variations:
- Add orange zest for a citrus note.
- Use pistachios or roasted macadamias for a variation.
- Instead of cauliflower use roasted broccoli.
- For additional flavour dress cauliflower with infused olive oils. Such as lemon infused olive oil.
- Use coconut yoghurt for dairy free.
Ingredients:
To make the roasted cauliflower salad you will need:
- Cauliflower – cut into steaks or florets and drizzle with olive oil to roast.
- Roasted Almonds – using roasted adds a robust nutty flavour. You can also use raw however roasted is recommended for flavour and crunch.
- Fresh herbs – buy as fresh as possible. Use herbs such as parsley, dill, coriander or your favourite leafy herbs.
- Ocean Spray Cranberry Sauce – this brand is preservative free.
- Ocean Spray Original Craisins – these add a sweet pop of colour and flavour to the fudge. Favourably, this brand is also preservative free.
- Coconut yoghurt – use an unsweetened coconut yoghurt for the dressing. Alternatively use unsweetened Greek yoghurt or yoghurt of choice.
Nutrition Tips:
- This dish celebrates the goodness of vegetables using cauliflower as a main ingredient.
- As well as being a source of healthy fats and protein, almonds provide fibre, vitamins and minerals. Both protein and healthy fats of also help to balance out the sugars for a nourishing salad that helps keep you fuller longer.
- Adding Ocean Spray Original Craisins they add a source of fibre and antioxidants.

Roasted Cauliflower, Cranberry & Almond Salad
Ingredients
- 1 head cauliflower
- extra virgin olive oil
- sea salt
- pepper
- 1/2 cup dry roasted almonds chopped
- 1/2 cup Ocean Spray Craisins® Original Dried Cranberries
- 1/2 cup fresh parsley chopped
- 1 tbsp fresh dill
Dressing:
- 1/2 cup unsweetened coconut yoghurt or yoghurt of choice
- 1/3 cup Ocean Spray Whole Cranberry Sauce
- 1 tbsp lemon juice
- 1 tbsp chives finely chopped
- sea salt
Instructions
- Pre-heat oven to 180°C.
- Slice cauliflower into 1cm think steaks or large florets.
- In a large mixing bowl, toss cauliflower pieces in extra virgin olive oil to coat well.
- Transfer to a lined baking tray (use two if needed so they don’t overlap). Season with sea salt and pepper.
- Roasted in oven for 25 minutes, turning at half way, cook until lightly golden and tender.
- Meanwhile, prepare dressing by combing yoghurt with lemon juice, chives and sea salt. Set aside.Place cauliflower steaks onto serving plates or platter.
- Just before serving dollop Ocean Spray Whole Cranberry Sauce across steaks and generously drizzle dressing over top. Finish with Ocean Spray Original Craisins®, fresh parsley and dill to serve.
