Ingredients

- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp cumin
- Pinch sea salt
- 1 cup chery tomatoes roasted
- 3 cups baby spinach sautéed
- 1/2 cucumber sliced into ribbons
- 1/4 cup kalamata olives pitted
- 1/4 cup feta cheese crumbled
Turmeric Quinoa
- 1 cup quinoa rinsed
- 2 cups water or broth
- 1/2 tsp ground turmeric
- 1/2 tsp garlic powder optional
- Pinch sea salt
Dressing
- 1/2 lemon juiced
- 2 tbsp tahini
- 1 tbsp extra virgin olive oil
- Extra virgin olive oil for cooking
Instructions
Turmeric Quinoa
- In a medium saucepan, combine quinoa, water or broth, turmeric, garlic powder, and salt. Stir well.
- Bring to a boil, then reduce heat to low, cover, and let it simmer for 15 minutes, or until the quinoa has absorbed the liquid.

- Pre-heat a pan a frying pan and grill or pan sear chops until cooked to liking.
