Lemon & Honey Bliss Balls
Ingredients
- 3/4 cup almond meal
- 1/2 cup organic dessicated coconut
- 1/4 cup Pumpkin seeds (pepitas)
- 2 tbsp Manuka honey
- 1 lemon (zest of)
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract or vanilla powder
- 1 tsp kakadum plum powder optional, see notes
- Pinch turmeric
- 2 tbsp sesame seeds
- 2 tbsp dessicated coconut
Instructions
- In a food processor pulse pepitas with almond meal and coconut to resemble fine bread crumbs.
- In a food processor pulse pepitas with almond meal and coconut to resemble fine bread crumbs. Add honey, lemon zest and juice, vanilla, Kakadu plum powder, turmeric. Pulse to combine.
- Spoon headed tablespoon portions and roll into balls.
- Mix sesame seeds and coconut together.
- Roll in sesame seeds and coconut. Store in air tight container in refrigerator.
Notes
For a firmer result add additional almond meal or coconut. Kakadum plum powder is a native plant food naturally rich in vitamin C. You can find this powder at health food shops. This addition to the recipe is optional but adds a great food source of vitamin C.
