Peanut Butter Rice Crispy Bars
Healthier, homemade rice crispy bars packed with good fats, protein and with no preservatives or artificial ingredients.
These are a great recipe for homemade snacks made with wholefood ingredients. Not just for a healthier option and being able to know what ingredients are going into them but to save money too!
They are so handy to have in the fridge or freezer to save you from last minute lunchbox stress, afternoon munchies or for when you need a healthier sweet snack.
How to Make
Using just a handful of ingredients, these Peanut Butter Rice Crispy Bars are quick and easy to make. You’ll likely have the ingredients on hand in the pantry already!
Firstly make sure your coconut oil is melted and tahini is soft. Simply combine melted coconut oil, peanut butter, tahini, maple syrup and vanilla, add crushed rice cakes and combine. Press the mixture into a lined sliced tray. Finally drizzle over with melted dark chocolate. Set in the fridge and cut into bars for a delicious treat.

These Peanut Butter Rice Crispy Bars will keep best in the fridge or freezer. I like to make these in bulk batches and vacuum seal to keep fresh using Food Saver System. They last ages this way, in fact the FoodSaver System keeps food fresher 5 x longer than typical storage methods.

Ingredients
Peanut Butter – for the healthiest option look for a brand with no added sugar or oils. Opt for a brand that ingredients are either 100% peanuts or peanuts with sea salt.
Tahini – hulled tahini is ground sesame seed paste and added to the recipe for a creamy addition and source of calcium!
Coconut Oil – find in the health food aisle of the supermarket or health food store. Choose unrefined coconut oil as a best choice.
Maple syrup – used as a natural way to sweeten and help ingredients hold together. Use 100% maple syrup not maple flavoured syrup. Available at the supermarket.
Vanilla Extract -choose the best quality one available to you, looking for extract over essence.
Rice Cakes – also known as rice thins, these serve as the bulk ingredient and crispy nature of the recipes. Essentially these are puffed rice pressed into round cracker-like discs, similar to corn thins but made from rice. Find in the supermarket or health food store.
Sea salt – choose the best quality one available to you.
Dietary Requirements
This recipe is gluten free, wheat free, dairy free when using non-dairy chocolate and egg free.
For dairy free, choose a dark chocolate without dairy or milk solids.
Recipe
Peanut Butter Rice Crispy Bars
Ingredients
- 1/4 cup Coconut Oil melted
- 1/3 cup Natural Peanut Butter
- 2 tbsp Hulled Tahini optional
- 1/4 cup Maple Syrup
- 1 tsp Vanilla Extract
- 8 Rice Cakes
- Pinch Sea Salt
- 50 g Dark Chocolate
Instructions
- In a mixing bowl add melted coconut oil, peanut butter, tahini, maple syrup and vanilla extract. Whisk to combine well.
- Crush rice cakes to small pieces and add to wet mixture. Mix well to ensure all rice cake pieces are covered well.
- Spoon mixture into a lined slice tin. Use the back of a spoon or spatula to press mixture firmly into shape to ensure they hold together when cut.
- Melt dark chocolate and drizzle over bars.
- Transfer to fridge for 6 hours + or 2 hours in the freezer to set.
- Once firmly set, use a sharp knife to cut into shapes.
- Store in sealed containers to keep fresh. I use a FoodSaver System to vacuum seal to keep freshest, longer. Keep in fridge or freezer. Must be kept chilled.
