Mediterranean Lamb Nourish Bowl

- 4 Cleavers Organic lamb loin chops
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp cumin
- Pinch sea salt
- 1 cup chery tomatoes roasted
- 3 cups baby spinach sautéed
- 1/2 cucumber sliced into ribbons
- 1/4 cup kalamata olives pitted
- 1/4 cup feta cheese crumbled
Turmeric Quinoa
- 1 cup quinoa rinsed
- 2 cups water or broth
- 1/2 tsp ground turmeric
- 1/2 tsp garlic powder optional
- Pinch sea salt
Dressing
- 1/2 lemon juiced
- 2 tbsp tahini
- 1 tbsp extra virgin olive oil
- Extra virgin olive oil for cooking
Turmeric Quinoa
In a medium saucepan, combine quinoa, water or broth, turmeric, garlic powder, and salt. Stir well.
Bring to a boil, then reduce heat to low, cover, and let it simmer for 15 minutes, or until the quinoa has absorbed the liquid.
Remove from heat, fluff with a fork, and serve warm in your nourish bowl.
Lamb Chops
Mix 1 tsp paprika, 1⁄2 tsp cumin, 1⁄2 tsp dried oregano, and a pinch of salt and pepper in a small bowl.
Rub the spice blend evenly onto both sides of the lamb loins and drizzle with olive oil.
Pre-heat a pan a frying pan and grill or pan sear chops until cooked to liking.
Assemble the bowl: start with quinoa, then layer on roasted tomatoes, spinach, cucumber ribbons, olives, and feta.
