Mediterranean Lamb Nourish Bowl

Ingredients

  • 4 Cleavers Organic lamb loin chops
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Pinch sea salt
  • 1 cup chery tomatoes roasted
  • 3 cups baby spinach sautéed
  • 1/2 cucumber sliced into ribbons
  • 1/4 cup kalamata olives pitted
  • 1/4 cup feta cheese crumbled

Turmeric Quinoa

  • 1 cup quinoa rinsed
  • 2 cups water or broth
  • 1/2 tsp ground turmeric
  • 1/2 tsp garlic powder optional
  • Pinch sea salt

Dressing

  • 1/2 lemon juiced
  • 2 tbsp tahini
  • 1 tbsp extra virgin olive oil
  • Extra virgin olive oil for cooking

Instructions

Turmeric Quinoa

  • In a medium saucepan, combine quinoa, water or broth, turmeric, garlic powder, and salt. Stir well.

  • Bring to a boil, then reduce heat to low, cover, and let it simmer for 15 minutes, or until the quinoa has absorbed the liquid.

  • Remove from heat, fluff with a fork, and serve warm in your nourish bowl.

Lamb Chops

  • Mix 1 tsp paprika, 1⁄2 tsp cumin, 1⁄2 tsp dried oregano, and a pinch of salt and pepper in a small bowl.
  • Rub the spice blend evenly onto both sides of the lamb loins and drizzle with olive oil.
  • Pre-heat a pan a frying pan and grill or pan sear chops until cooked to liking.

  • Assemble the bowl: start with quinoa, then layer on roasted tomatoes, spinach, cucumber ribbons, olives, and feta.


Tahini Dressing

  • Mix tahini, olive oil, and lemon juice for a creamy dressing. Drizzle over the bowl.
