GLUTEN FREE PITA POCKET FILLINGS
Ingredients
Healthy Pita Burgers
- 1 tbsp aioli
- 1/4 avocado sliced
- 1/4 cucumber sliced
- 1/2 cup fancy lettuce
- 1/2 small tomato sliced
- 1/8 red onion thinly sliced
- 1 turkey mince patty See below*
- 1 gluten free pita pocket
Pesto Chicken Pita Pockets
- 2 tbsp pesto
- 1/2 cup rocket
- 1/2 cup capsicum char grilled
- 1/2 cup chicken cooked & shredded/ sliced
- 1 gluten free pita pocket
Greek Style Falafel Pita
- 1 tbsp eggplant dip
- 1/2 cup salad leaves
- 2 falafels halved
- 1/2 cup zucchini char grilled
- 1 small tomato sliced
- 3-4 olives sliced
Greek Style Yoghurt Dressing
- 4 tbsp yoghurt I use coconut yoghurt
- 1/2 tsp minced garlic
- 1 tsp lemon juice
Instructions
- Toast pita pockets to warm through and open up.
- Spread with condiment (aioli, eggplant dip, pesto).
- Fill with vegetables or salad ingredients.
- Add protein (chicken, falafel, turkey patty).
- Finish with additional condiments.
