
Gluten Free Macadamia Cookies
These Gluten Free Macadamia Cookies are deliciously crunchy on the outside and chewy on the inside with the buttery crunch of Australian Macadamia Nuts. Perfect for a naturally sweet treat that’s healthier than typical cookies and biscuits.

How to Make
These Gluten Free Macadamia Cookies are quick and easy to make. Simply mix dry ingredients, then wet ingredients and combine. The key is to make sure the coconut oil you are using is softened and not liquid or runny.
Once you have made the cookie dough, add in macadamias and chocolate chips and shape dough into cookies. Transfer to a fridge for 20 minutes before baking in the oven. This will stop your cookies from spreading too thin when baking.

Ingredients
Almond meal – also known as almond flour, ground almonds makes the flour base for these healthier cookies.
Gluten free flour – in combination with almond meal the gluten free flour creates a delicious texture for these cookies. You can use a supermarket or health food store brand of gluten free flour blend.
Coconut sugar – a natural sweetener great for baking. Available in the health food section of the supermarket or health food store. You can also use brown sugar.
Coconut oil – use softened coconut oil and not liquid. Depending on the temperature coconut oil will turn liquid when hot/ hot climate or will turn solid when cold. To soften bring to a room temperature or slightly warm to desired consistency or place in fridge to slightly firm.
Maple syrup – used as a natural way to sweeten the cookies, it also helps bind the dough. Use 100% maple syrup not maple flavoured syrup. Available at the supermarket.
Egg – use a room temperature egg for best results.
Australian Macadamias – macadamias add a delicious, buttery crunch to these healthier cookies as well as health benefits in macadamias. Look for ‘Australian’ macadamias on labelling when choosing macadamias from the supermarket or health food section.
White Chocolate Chips – an optional delicious addition to these cookies. Typically being made from milk solids, if you are dairy free omit or replace with a dairy free chocolate chip alternative from health food stores or use dairy free dark chocolate, chopped.
Dietary Requirements
This recipe is gluten free, wheat free and refined sugar free.
For dairy free, simply omit white chocolate chips or replace with a dairy free alternative.
Recipe
Gluten Free Macadamia Cookies
Ingredients
- 1.5 cups almond meal (or almond flour)
- 1/2 cup gluten free flour
- 1/3 cup coconut sugar
- 1/4 cup coconut oil softened, not liquid
- 3 tbsp maple syrup
- 1 egg room temp
- 1 tsp vanilla extract
- 1/2 tsp gluten free baking powder
- Pinch salt
- 1/3 cup Australian Macadamias roughly chopped
- 1/3 cup white chocolate chips (optional)
Instructions
- Pre-heat oven to 170°C.
- To a bowl mix dry ingredients; almond flour, gluten free flour, coconut sugar, baking powder and salt.
- Make a well in the middle of the dry ingredients or use a separately bowl to combine wet ingredients. Add egg, softened coconut oil, maple syrup and vanilla and whisk to combine.
- Mix wet ingredients into dry ingredients .
- Add macadamias and chocolate chips and mix in.
- Spoon heaped tablespoon portions into cookie shapes, using hands to shape as needed.
- Transfer cookie dough to fridge for 20 minutes.
- Bake cookies in oven for 15-20 minutes or until lightly golden on the outside.
- Allow to cool. Store in an airtight container.
