Gluten Free Macadamia Cookies

Crunchy on the outside, chewy on the inside and with the buttery crunch of Australian Macadamias.

Ingredients

  • 1.5 cups almond meal (or almond flour)
  • 1/2 cup gluten free flour
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil softened, not liquid
  • 3 tbsp maple syrup
  • 1 egg room temp
  • 1 tsp vanilla extract
  • 1/2 tsp gluten free baking powder
  • Pinch salt
  • 1/3 cup Australian Macadamias roughly chopped
  • 1/3 cup white chocolate chips (optional)

Instructions

  • Pre-heat oven to 170°C.
  • To a bowl mix dry ingredients; almond flour, gluten free flour, coconut sugar, baking powder and salt.
  • Make a well in the middle of the dry ingredients or use a separately bowl to combine wet ingredients. Add egg, softened coconut oil, maple syrup and vanilla and whisk to combine.
  • Mix wet ingredients into dry ingredients .
  • Add macadamias and chocolate chips and mix in.
  • Spoon heaped tablespoon portions into cookie shapes, using hands to shape as needed.
  • Transfer cookie dough to fridge for 20 minutes.
  • Bake cookies in oven for 15-20 minutes or until lightly golden on the outside.
  • Allow to cool. Store in an airtight container.
