To a bowl mix dry ingredients; almond flour, gluten free flour, coconut sugar, baking powder and salt.
Make a well in the middle of the dry ingredients or use a separately bowl to combine wet ingredients. Add egg, softened coconut oil, maple syrup and vanilla and whisk to combine.
Mix wet ingredients into dry ingredients .
Add macadamias and chocolate chips and mix in.
Spoon heaped tablespoon portions into cookie shapes, using hands to shape as needed.
Transfer cookie dough to fridge for 20 minutes.
Bake cookies in oven for 15-20 minutes or until lightly golden on the outside.
