Baked Sweet Potato Chips + Sugar Free Tomato Sauce

These healthy, homemade oven baked sweet potato chips go perfectly with our recipe for sugar free tomato sauce for dipping. These make for a great snack, after school treat and also a clean eating side dish the kid's (and big kids) will love too. Perfect for a gluten free, grain free or Paleo snack.

Ingredients

  • 1 medium sweet potato cut to resemble chips
  • 1 tablespoon extra virgin olive oil
  • 1 pinch Sea salt and black pepper

Tomato Sauce

  • 400 g organic crushed tomatoes (with no added sugar or preservatives)*
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic crushed
  • 1 teaspoon dried basil leaves
  • 1 pinch Sea salt and black pepper

Instructions

  • Pre heat fan-forced oven to 200C. 
  • In a medium mixing bowl toss sweet potato with oil, salt and pepper. 
  • Transfer to a baking tray. 
  • Bake in oven for 30 - 35 minutes, turning at half way, or until cooked through and golden. 
  • Meanwhile make tomato sauce. Puree tomatoes, olive oil, garlic, basil, salt and pepper in a blender/food processor or hand mix with attachment until smooth. (I use my Vitamix). 
  • Pour mixture into a medium saucepan and simmer for 15 minutes. Allow to cool. 
  • Serve chips hot with tomato sauce for dipping. Store extra tomato sauce in an air-tight container in refrigerator. 

Notes

Serving Suggestions:
  • Serve as a savoury snack or as a side dish with cooked fish or chicken.
  • This recipe is also a great side to our Paleo Popcorn Chicken recipe.
Make It Personal:
  • Toss sweet potato chips with 1 tablespoon dried herbs such as rosemary or oregano before baking.
Recipe Tips:
  • To prevent your chips from going soggy I recommend pre-heating your oven tray prior to transferring chips into for baking.
Sensitive to FODMAPs?
  • Omit fresh garlic from tomato sauce use garlic infused olive oil in place of olive oil.
