These healthy, homemade oven baked sweet potato chips go perfectly with our recipe for sugar free tomato sauce for dipping. These make for a great snack, after school treat and also a clean eating side dish the kid's (and big kids) will love too. 400 g organic crushed tomatoes (with no added sugar or preservatives)*
1 tablespoon extra virgin olive oil
3clovesgarlic crushed
1 teaspoon dried basil leaves
1pinchSea salt and black pepper
Instructions
Pre heat fan-forced oven to 200C.
In a medium mixing bowl toss sweet potato with oil, salt and pepper.
Transfer to a baking tray.
Bake in oven for 30 - 35 minutes, turning at half way, or until cooked through and golden.
Meanwhile make tomato sauce. Puree tomatoes, olive oil, garlic, basil, salt and pepper in a blender/food processor or hand mix with attachment until smooth. (I use my Vitamix).
Pour mixture into a medium saucepan and simmer for 15 minutes. Allow to cool.
Serve chips hot with tomato sauce for dipping. Store extra tomato sauce in an air-tight container in refrigerator.
