Apple Donuts with Nut Butter Icing & Craisins

By including healthy fats and protein in snacks, it will keep you fuller longer and help to support balanced blood sugar levels. Ultimately this helps keep cravings at bay. For example a healthy fat could be things like avocado, nuts, nut butter, extra virgin olive oil. Examples of plant protein include nuts, seeds, nut butter, quinoa, tofu, tempeh, chia seeds or good quality protein powder.

A great example of combing healthy fats and plant protein into a simple, healthy snack are these Apple Donuts with Nut Butter Icing & Craisins. The nut butter provides a source of good fats and some plant protein to help balance the natural sugars in fruit and support stable blood sugar levels.

Apple ‘Donuts’ with Nut Butter Icing & Craisins


Using just three simple ingredients the recipe can be made in minutes.

Apple – use any, either any red variety or green apple smith.
Nut butter – use any of choice. To avoid added refined sugars, poor quality oils or emulsifiers use a nut butter that is made from 100% nuts. For example almond butter, natural peanut butter or macadamia nut butter.

How to Make: 

  1. Firstly, peel, core and slice apple into rings that represent donut shapes. Use an apple corer for the perfect round centre. 
  2. Secondly, after the apples are ready, spread your choice of nut butter on top of apple to act like an icing. You can use any nut butter of choice including almond butter, peanut butter, macadamia nut butter or similar. 
  3. To finish the Apple Donuts with Nut Butter Icing & Craisins, decorate each with cranberries. Most importantly, make these fresh when ready to eat or just before a picnic! However, if you need to make these in advance stop apples from browning by rubbing orange segments or orange juice over cut apple. Likewise use lemon juice.
